Sautéed Liver and Onions

calf liver, slice 1/4" thick

flour

onion, sliced thin

cup

butter

chicken broth

paprika

pepper to taste

vinegar

salt to taste

Heat butter in a skillet, add onion and sauté until golden.

Cut liver into 1" wide strips, sprinkle with flour, add to onions and sauté quickly for about 5 or 6 minutes, until browned. Do not overcook since this toughens the liver.

When livers are done, add chicken broth, paprika, vinegar, and pepper, stir well and let come to a quick boil, put on a serving dish, salt just before serving.
