Paprika Chicken

chicken (3 to 3 1/2 pounds), quartered

onion minced

chicken broth

sour cream

Heat butter in a saucepan, add onion and sauté until onion is soft.

Add chicken, paprika, salt and pepper and sauté until chicken is lightly browned.

Add broth, cover and cook gently until chicken is cooked, about 30 to 40 minutes.

Remove chicken pieces and keep warm.

Blend flour into sour cream, stir into the pan and mix well. Simmer for 5 minutes but do not let boil.

Correct seasoning, return chicken to gravy, heat through and serve.
